1. Heat the oil and butter in a big pot, include onions and cook till golden and soft brown.
2. Include the carrots, celery, potatoes, garlic, green beans and tomatoes. Prepare for 2-3 minutes.
3. Include the water and stock cubes.
4. Give the boil, then lower the heat and let it simmer semi-covered for 1-1 1/2 hours. The soup needs to be relatively thick at this point. Leave the cover off and simmer for an additional 15 minutes if it is not.
