Directions:
� Wash hominy under running water till water runs clear; location in a bowl with limas and chickpeas.
� Cover with water, and soak a minimum of 8 hours or over night; drain. Blend 1/2 cup oil, paprika, chile flakes, and 1/4 of the garlic in a bowl; set sauce aside.
� Heat staying oil in an 8-qt. pan over medium-high heat. Period veal and pork with salt and pepper; working in batches, contribute to pan, and cook, turning, till browned all over, about 5 minutes.
� Transfer to a plate. Include chorizo; cook up until fat renders, about 2 minutes. Include staying garlic and onion; cook till soft, about 3 minutes.
� Include tomato paste, oregano, cumin, and bay leaf; cook for 2 minutes. Return meat to pan with hominy, beans, chickpeas, squash, and 10 cups water; boil.
� Minimize heat to medium-low; cook up until hominy and beans hurt, about 2 hours. Stir in juice; period with salt and pepper.
� Divide amongst bowls; drizzle with sauce.
� Sprinkle with scallions.
